Are you giving up sugar? If so, congratulations! Whether you are a diabetic or not, the decision to cut sugar from your life is a healthy one. Sugar is nothing but empty calories, which means it has no nutritional value whatsoever. It depletes your body of important nutrients like vitamin B and calcium, and leads to dramatic highs and lows with your blood sugar. Severe swings in blood sugar can cause swings in mood. You may start off feeling energetic then crash and feel tired and moody. It's the effect of the sugar on your body, which can be remedied by removing sugar from your diet. Usually, fudge is laden with sugar. However you can make fudge without sugar thanks to the many sugar substitute choices available. The most popular sugar substitutes include aspartame, sucralose and stevia. Aspartame can be found under the brand name Sweet n Low and sucralose under the brand name Splenda. Stevia is a natural herb with a very sweet taste that can also be used in place of refined sugar. Some people use fruit juice but for the purposes of the following recipe you will need a powdered sugar substitute.
Combine 16 ounces of cream cheese, two blocks of unsweetened chocolate, 1/2 cup sugar substitute, 1 tsp of vanilla extract and 1/2 cup walnuts or pecans if you like nuts in your fudge. Nuts are heart healthy and adding them to this recipe gives you a boost of protein. Beat all ingredients except nuts together in a bowl with an electric mixer until smooth. Gently stir in nuts. Pour the mixture into a square baking pan and refrigerate at least overnight until the fudge is firm. Cut into squares and serve.

Fudge doesn't always have to be chocolate, either. There are many different variations you can try, including vanilla, butterscotch and peppermint. The key is to use unsweetened flavorings and sugar free sweetener. One beautiful idea is a marbled fudge that combines two flavors together.
