Sugar Free Cookie Recipes

Who doesn't love cookies? Everyone has their favorite type of cookie, from chocolate chip to snickerdoodle. The problem is that these beloved treats contain sugar. Many people, especially those with Type 2 diabetes, want to limit their intake of sugar or eliminate it entirely. Sugar free cookie recipes allow you to bake your favorite cookies without the use of sugar. These cookies taste just as good if not better than those that contain white sugar. Here is a recipe for sugar free oatmeal cookies that will satisfy any cookie lover:
1 cup whole wheat flour
1/2 tsp baking soda
1 1/2 cup instant oats
1/2 cup artificial sweetener (such as Sweet n Low, Splenda or Sugar Twin)
1 tsp vanilla extract
1/2 cup skim milk
1/3 cup vegetable oil
2 egg whites (beaten slightly)
Preheat oven to 375 degrees. Sift all dry ingredients except the oats. After dry ingredients are sifted add oats. Add remainder of ingredients. If you like you can add a cup of raisins and/or a half cup of nuts to the batter. Use a teaspoon to drop cookie batter on a cookie sheet. Bake for 12 to 14 minutes.
If you love chocolate, you should try this variation of the no-bake, sugar-free oatmeal cookie:
1/2 cup milk (soy milk can be used)
3/4 cup maple syrup
1/4 cup melted butter or margarine
2 tbsp cocoa powder
3 cups instant oats
3 finely chopped dates
Preparing these cookies couldn't be easier. Simply combine all ingredients until well mixed, drop onto a cookie sheet and refrigerate until chilled and set. That's all there is to it!
